Jalapenos and MORE Jalapenos: Like Them or Not

There are many ways to use jalapenos whether you love them or just tolerate them. I enjoy them tempered by cheese in GF cornbread. I make them fermented for Adam who will use them on almost anything. I value them in my favorite natural antibiotic blend.



Jalapeno GF Cornbread

1 Bob's Red Mill GF Cornbread mix or your own favorite tried and true mix

1 cup of shredded raw cheddar cheese

1-2 diced jalapenos (to taste)

Mix all ingredients well.

The secret to this scrumptious quick bread comes from one of my first TN friends-the cast iron pan! Generously butter a 12-14 inch cast iron pan with sides and cook it according to the instructions on the cornbread mix you have chosen.


Fermented Jalapenos


Jalapenos cut into rings, long sticks or chunks, deseeded

Garlic

Sea salt


Pack a pint jar with jalapeno pieces. Add 2-3 garlic cloves, quartered per pint jar and 1/2 T of sea salt. Top with pure water (no city water.) Let sit at room temperature for 3-4 days or until the bubbly action ceases. Move to cold storage. Use them on hamburgers, eggs, on baked potatoes and more. SAVE THE BRINE! The brine is a super probiotic shot with an immune boosting punch between the jalapenos and the garlic. You drink it straight if you are so inclined but most of us prefer to dilute it in some water or add it to homemade salad dressing.


Super Tonic or Master Tonic


Here is where most of our jalapenos end up. Our favorite natural antibiotic, antiviral, antibacterial go to comes straight from herbalist Rachel Weaver's "Be Your Own Doctor" book. We have been using variations of this blend for nearly a decade and every year I make several gallons. We share it with so many people! We combine it with other herbal blends to make them even more effective.


Basic Recipe:

Chop equal parts of fresh onion, garlic, horseradish, ginger, cayenne and/or jalapeno peppers. Fill a quart (or half gallon) jar with these ingredients. Cover it with chemical free, raw apple cider vinegar. Let it sit for 2-4 weeks. Strain and use liberally anytime you warrant the need for a natural antibiotic. It works great to fight off illness and combat yeast infections. The sooner you begin to use it the faster symptoms normally clear up. There is no need to brave this mixture as a straight shot although some do enjoy it this way. I typically add a T to a small glass of water or 3-4 T to a quart of water and drink it throughout the day.


This basic recipe is just that...basic. I occasionally do not have an ingredient on hand and may leave it out if it is for our family. I often add to this base as well. I value the addition of turmeric (with a few twists of black pepper), rosemary, thyme, orange peels, blueberries, etc. The options are endless.
