Paleo Friendship Brownies

These are the types of treaties I enjoy making and sharing w a friend. For nearly seven years I had the privilege of living next door to some fine friends whom I could send new recipe treats via kid carrier. Circumstances dictated a move and that season has closed. Those friends are still there but the distance dictates the inability to share in the same way... So here... Here I can share my heart full of the memories and hope for the future...and one pretty good Paleo brownie recipe paired w ginger bulletproof coffee. LChaim!

Paleo Friendship Brownies

1 1/2 cup peeled roasted sweet potato cubes.

2 whisked eggs

1/2 c almond butter

1/2 c honey or sucanut

1/2 c milk or milk alternative

1 c carob or raw cacao

2 tap baking powder

1/2 c mini chocolate chips

Preheat oven 350.

Grease an 8 inch glass pan.

Mash sweet potato well and add the other wet ingredients. Stir well. Mix the dry ingredients separately then stir them into the wet ingredients. Fold in the chocolate chips. Texture should be like thick brownie texture. I had to add almond flour once to make them a little thicker. You can add a bit more milk to thin them if they are too thick. Bake until just done-do not overcook. Enjoy!
